When I open a book in Logos 5 it goes to the right pane. How do I either expand it to full pane or have it open to the left pane?

You can grab the tab of the resource (see image) and drag it to the left. Half way will be full screen and far left will place the resource on the left side of the screen. When dragging, you will be able to see where the resource will be placed. This works in all directions.
With a book in the right panel, to expand to a full pane, hover the cursor over the left edge of the book pane until you see a double-pointed arrow and drag to the left until you have a full pane. I'm not sure how to make the left pane the default.

If you hover the cursor over the leftmost line of your open panel it should change and allow you expand the panel leftwards.
Or you can simply start to drag the tab of the resource and it will offer you a full panel option.
I don't think you can control where a resource opens.
You can drag rather than just click on the link or menu item that you use to open the resource. Drag it wherever you want it to open.
