I started the 5 day a week Bible reading plan for 2017 on Monday, January 2nd. The first week gave me Bible readings for each day of the week from the Old and New Testaments. The coming week shows Monday, January 9th and Tuesday, January 10th as "Catch-up" days . I do not need any "Catch-up" days on Mondays - Fridays. How can I get the 5 day a week Bible reading plan to give me Bible readings for each Monday - Friday with no "Catch-up" days?
I can't reproduce this problem. I started the 5 Day Bible Reading plan on Monday, 2 January and it puts the readings on weekdays and catch-up days on the weekends. Could you upload a screenshot of how it looks on your system?

Ah, I think I understand. We built the "Catch-up days" into this plan so that it would "just work" if "read every day" (the default is selected). To fix this, you'll need to recreate the reading plan, but choose to read "every day" instead of "every weekday".
