It is possible to export a word list to different types of documents, is it possible to import different documents into a word list? I'm referring to external documents, not other word lists.

Yes, any text can be added to a wordlist by using the system clipboard. Just select the text you're interested in in whatever doc you have and hit Cmd/Ctrl+C, then select Add/From clipboard in the wordlist.

Unfortunately that only populates the card front, the gloss and the lemma have to be filled in manually.

Additionally if I want the card front to have something more than a single word, I have to fill it in by hand (front-τά,τῶν,τοῖς,τά gloss-definite article, neuter, plural).

Since it has the ability to export to a spreadsheet, I was kind of hoping to be able to import from a spreadsheet where it's easier to build the lists.

I did one several years ago and it was manual, as laid out in a post above. If you're interested in the list itself, it's public: https://fl.vu/j89wk4 If you need more detailed instructions about creating one, please come back.
