I've been playing around with large word lists (entire corpus), and notice that the counts aren't accurate. For example, a word list of the entire Logos LXX (Gen - Bel), reveals that κύριος has 2,881 occurrences. Yet a search in the same resource says it's actually 8,274. Why the discrepancy?

Are you sure about the bible as it generates a Hebrew word list?
The Lexham LXX Interlinear generates a Greek list and its count for κύριος in the book of Genesis is correct (214)

That probably explains it. 2,881 is probably the count of words from the Greek sections of the LXX that have no Hebrew equivalent (i.e. most of the apocrypha).
