I love the Visual Copy feature of Logos 6. I have a question for anyone out there who can possibly help me: Can the slides in Visual Copy be edited?

The verse of the day stuff is set in stone.
The choice of what text to put into a visual image slide is done by selecting the text that you want.
That is about the limit of editing that is possible.
Unfortunately you cannot make a slide from text in your notes.
The slides cannot be edited, but you can edit the text in the Visual Copy window before sending it to PowerPoint. Below the slide preview, there is a box with the text in it labeled "Body Text". You can edit the text there.
