Could someone who has both the first and second editions of John Collins' Introduction to the Old Testament in Logos tell me the major differences between the two? I'm especially interested to know about changes in formatting, images, maps, etc.

If so, I have both.
In the preface to the second edition it says,
This revised second edition has updated bibliographies and is presented in a different format from the original.
I have made only minor changes to the text. I have moved the discussion of the book of Jonah from chapter 26 (the Hebrew Short Story) to chapter 20 (Postexilic Prophecy). I have separated out introductory comments on the Deuteronomistic History, Prophecy and the Writings. I have revised my analysis of the flood in chapter 2. Numerous smaller changes are scattered throughout the book.
A number of his charts have updated information and are certainly in a more readable format. And certainly, there are dozens and dozens of graphics and illustrations in the second edition; whereas, the first edition is basically void of such.
But one thing that is significantly better about the first edition is the amount of information that displays when you hover over highlighted blue text fields. This is practically non-existent (except for dates/timelines flags) in the second edition.

*IF* the price is the same, I would definitely buy the second edition for one simple reason...the inclusion of a companion resource from Logos. The companion resource for the first edition (included in the price) is basically just questions, relevant commentaries, and links to online resources put together by Collins. It is very short and provides little benefit to me.
However, with the second edition of Collins Introduction book, the companion resource included in the purchase price is "A Study Companion to Introduction to the Hebrew Bible, 2nd ed". It is a wealth of additional information and material that truly helps you get much more out of Collins Introduction to the Hebrew Bible.
