iPad gestures

Can someone help me with where the setting is to turn on gestures in the iPad app, and what the list of gestures is? I just spent 30 minutes trying to find any documentation on this to no avail.

EDIT:  I should have added that I am not aware of a setting to turn off/on gestures.  I believe they are available all the time.  Maybe someone else has more update information.
