Anytime I insert a Scripture reference in the sermon editor it places the ESV in it. That is my primary study Bible. However, I use the NIV in most church contexts. How can I change what translations is placed in the sermon editor?

The only control we have at the moment is by setting your "Preferred Bible". This is the one that will be used by the Sermon Editor.
There are plans to allow selection of versions at some stage but it's not here yet.
EDIT: And if you don't know how to set your "Preferred Bible" please advise.
Almost four years later, I want to bump this idea. I also use a different translation for my primary study Bible and for preaching. It would be really nice to set a default translation in the info pane of the sermon editor.
Or to set each reference to a particular translation such as "1 John 5.11-12 | RSV" or something similar. Is that available currently, Graham Criddle? About - Graham Criddle - Faithlife

No, nothing has changed in this area. The Bible selected is your preferred Bible and it isn’t possible to set a different ”default” for the Sermon Editor.
