I've searched the forum, but I've missed any reference to a video teaching how to highlight and do the various notes in Logos 7. Is there any thorough video on this topic?

Mark, little has changed in highlighting and notes in Logos 7. You didn't tell us if you have previously used Logos' earlier version or are new to Logos, so I will assume you are new at this point.
The wiki has some good information on highlighting (see also the link on the right to an 'unofficial' video tutorial by MVP Mark Barnes, and note taking (with links to video tutorials on the right).
Have a look at https://www.logos.com/training/logos6/highlights-intro and the other videos listed there - custom highlight and a couple on notes - and see if that helps.
