Say I want to find out what Hebrew words are usually translated ekklesia in the LXX...
Is there a quick way to do this?
1. Run the Bible Word Study guide on the Greek word in the LXX.2. Look up the "Septuagint Translation" section in the guide for Hebrew words it translates.

Is there a good tutorial video for using the LXX?
Another way to do this is to search the Septuagint for lemma:ἐκκλησία. Set the search results view to Analysis and drag the Lemma (Hebrew) column to the top of the search results window. This will group the matching verses according to the Hebrew lemma that the Greek word translates in the LXX.
