There is an XPS option - at least on Windows - which, as I understand it, is an XML based document.

I don't think you can - the best thing to do is copy to the clipboard and paste into Pages - that will allow double sided printing.
You could also paste into something like TextEdit and add the XML mark up codes yourself - it should be fairly simple with straight text.
Yes you are right if you are going to say that the printing facilities on the mac version are somewhat incomplete.
