How can I disable the auto bulleted lists feature?

Just hit enter twice when you are done with your bullet list.

Are you meaning how when you type an * or a - that Notes will turn it into a bullet? There isn't currently a way to disable that.

The best you can do is type the * or - twice (**, —) start to type your note, and go then go back and delete the second one.
