I discovered that the mobile app doesn't show me the Bible refs but only the text of the highlight in each note. I guess I should not have assumed the notes feature was of any use on the mobile platform... feels like a bit of a basic omission!

I believe this is fixed on the TestFlight beta of the app. Graham, I'm assuming you might have the beta on your iPad but not your phone?
I can confirm that they're showing for me on iPhone running the beta (8.1.0).
