simple noun chart
This question couldn't be more basic but I could not find an answer. Is it possible somewhere in Logos to enter, say, a noun in Greek, and have it declined, as is done in textbooks (i.e., nom sing, gen sing, dat sing, etc.). I am still a beginner at koine Greek so this would be especially useful for irregular nouns (or verbs).

Not to the full extent. Logos has morphological charts (open from the command box or search under Tools for 'morph'), but they only include forms existing somewhere in the Greek NT. The charts may thus be full or less so, depending on usage of the NT writers.
In the past, learners of Greek have asked Logos to include all of the possible chart entries, not only the existing ones, but so far there has been no change. Maybe they generate the content on the fly from a morphologically tagged lemma / surface text database such as the SBL Greek NT.
Have joy in the Lord!
