Is it possible to create a handout longer than 2 pages?

It depends on the layout you use.
look in the bottom right hand corner of the handouts page and change it to booklet. You can then get up to four pages.

Yes, I noticed that, but the "four pages" are really two in landscape layout.
Is it possible to add more beyond those default values?
You are of course correct Fernando. They are printed thus to be folded and stapled into a booklet.
Unfortunately no, there is no way to go beyond the four (two) pages using the handout tool in it's present iteration.
However, with a little bit of thought, one can make 2 handouts to get 4 pages ... a silly work-around that should be formalized by Logos since they now have the handout working well enough to be useful.

Handouts should really be virtually unlimited. You ought to be able to add all the maps and graphics and whatever else you want to it, not be limited by some arbitrary page count. Also, the "Blank Item" you can add should be generalized to allow just about any arbitrary Logos item to be added in there - notes, clippings, word puzzles, word study wheels, reading plan calendars, etc.
