How do I delete text either in a tagged box or just my own inserted text? this is the first time I'm using it so my questions my be blurry.

If the text is in a box you can click in the box and press Delete. That will delete the box of text

yes that's one of my two questions.
however, if I right click in that box nothing appears. I can high light the text in the box but that's it.

I assumed you meant click in the box and WITH MY MOUSE RIGHT CLICK AND DELETE.

In some ways, yes.
Both of them are available to be filled with text of your choice with a range of formatting options (more options available in Word).
Each of them can be based on a template
Each of them can have metadata associated with them.
One - the Word doc - can be formatted / manipulated on in many more ways that the other
One - the sermon doc - is much more tightly integrated into the wider Logos (and Faithlife) environment
