How to create Reading Plan at your own pace?

I have done it before, but for the life of me I can't figure out how I set up a reading plan to read a book at my own pace. Could someone please enlighten me again?

Open the panel menu of the resource (three vertical dots) and click Start reading plan

Or you can do the same thing from the Information pane in the Libary.
