You might like these. I don't think Logos has the complete set.

Not in Logos, but Ruth Haycock's Encyclopedia of Bible Truths series is interesting. I wish this was in Logos.

This comprehensive index to the Bible is the fruit of a Life's dedication and study by Dr. Ruth Haycock. Because a wide variety of subjects are covered and defined in light of Scripture, this tool will become your constant companion as you answer questions, prepare lessons, do research, and lead topical studies.

Not in Logos, but Climbing Parnassus provides some context on the history of classical language learning. Composition in the Classical Tradition is a one volume overview of the Progymnasmata and also a textbook used in some law schools.  Search your logos library for "Progymnasmata" and "Rhetoric"

The above book combined with the IVP Dictionary on Paul includes a lot about ancient composition.

Quintilian is one of the earliest writings on education of children that I am aware of.

With extensive commentary about their historical context and theological significance, this volume of writings covers a crucial time and an understudied period of Dietrich Bonhoeffer’s life. It begins during the final period of his illegal work in training Confessing Church seminarians and concludes as he begins his activities in the German resistance. Bridging these two periods is his brief journey to the United States in summer 1939, when he pondered and ultimately rejected a move to the safety of exile. Bonhoeffer’s writings from this transitional period, particularly his New York diary, offer a rare and more deeply personal picture of Bonhoeffer in a time of great inner turmoil.
