How do the video lectures in Logos Bible Software "work"? I know they are videos but to what extent are these like courses?

Are you talking about the courseware videos, aka Logos Mobile Ed? These are video courses. It's like sitting in on a lecture series live, except you get no grades or feedback. They are usually taught by well-credentialed professors, so you're getting college or seminary-level material. The product description pages tell you how many hours of video are included.
Some of the video courses come with a textbook, and some of them also come with a "Activities" book, linked to the textbook, which contains fill-in-the-blank questions and further links to Factbook entries and Topic Guides for you to do more research.
I only have a handful of these courses so I can't tell you if there are other models in some of the other courses, but this is an example of what I've got:
Video lectures are just lectures on a book given by the author of a book. They just show how the author presents the material he wrote in a lecture format. Assuming you’re talking about the Zondervan video lectures. Mobile Ed are courses you can actually take like Rosie explained.
