Is there a way when I highlight a portion of the text in a commentary to have that go to my sermon document without all of the reference material being copied with it each time? For example, I copy a portion of text from the Expositor's Bible Commentary and I want that copied text in my sermon, but it also writes in the sermon that the copy is from the EBC. And if I have several portions of text selected it lists the EBC information multiple times, each time i copy something from that resource.

I am grateful citation always comes into my sermon doc. It helps me remember not to plagiarize (I acknowledge source without full academic citation verbally or include the citation on my slide). I do often convert to endnote (I write my sermon in Word then copy into Sermon Document) and change long citation to "Ibid."

Welcome to the forums. It is possible in Program settings to turn the reference information off everywhere but not selectively i.e. not just in forums.
