Is there a way to have a password for certain notes or note books ?
Nope. And not encrypted either.
The instructions are: if it's that private, not Logos.
Why would you want a password anyway? Nobody uses my software, so I have no need for that. I like what Logos does, it has your login information ready at the click of a mouse at the right hand corner of the software. So when people ask if they can “borrow” my software and install it in their computer I say no because it’s copyrighted to me and my personal information is one click away once I’m logged in. Anyone could go and change emails, passwords, etc. Besides, I’ve invested a lot of money on it to just let people use it for free on their computer. DAL
I'd like to be able to password protect my daily journaling. This is private between me and God and wouldn't want someone to pick up my tablet and find my journal "by accident."
The advantage of having my journaling in Logos where I can have access to all the tools is immeasurable.

Protect your tablet with a secure PIN.
I know that in the newer versions of iPadOS, you can set certain apps to require fingerprint/face ID/passcode to be able to open. Surely, the same can be done on Android, though I've never tried it.

Android has biometric security as well as traditional PIN, passwords. And it has lost device protection.
I'm not the only one in our home that uses the tablet. Really need a way to secure a document WITHIN Logos rather than suggestions on how to secure my tablet.
As far as I know there is no way to secure a document within the Logos app.
If you are using an Apple tablet? There is a way to secure the Logos app on an Apple device so only you can access it. This requires IOS or iPadOS 17 or higher.
According to your licence agreement with Logos only the licensed person can use the Logos app. This would explain why they have not created a way to lock individual files.
If you want Logos to consider locking individual files you would have to log a suggested change. I would recommend waiting until the new forums are implemented over the next week before doing it.
Which implies that your family do not have their own OS User account (and sign-in) and thus have access to your Logos account (as per Antony's response above).

I know they have that in Android, but can you assign it to be needed to open specific apps at your choosing?
Not certain what tablet you're using, but in iPadOS 18.x, you can hide and lock on an app-by-app basis.

There is no indication that Logos will ever develop something like this, and to do so would go against their best interests. Logos is very clear that one Logos account is designed to be used by one person. If you are uncomfortable having Logos on a device that is shared by other people, then you should consider either limiting Logos to personal devices or locking Logos for your personal use either through a separate user account or by password-protecting the app, where such an option is possible.
While you may want to have your account accessible to family members while at the same time restricting their access to your personal information, it is not intended that one Logos account be shared by multiple people.
