Find All Notes That Have No Tags
Is there a simple way to retrieve all notes that have no tags attached to it so I can start tagging notes that need to be categorized from years ago?

No.
A Docs search for mytag:* will show you which Notebooks have tags and give you an idea where to start (search results vs. notes in Notebook).

I think it would be a help if there was a way to list Notes with no tags.... I run across a Note every now and again that has no tag... so I tag it. But that's a slow process.
Wat happened with me... is I created Notes in WordSearch with no tags, and when I imported them to Logos... Now I have many Notes with no tags.... But eventually.... It'll all come out in the wash... as my momma used to say! [8-|]

It would be useful to have an "notag" option in notes. There is one for notes without an anchor. In the library there is one for resources with no tag. I would vote for that.
