It seems like the lexical exposition of echad is absent from every single usage in Scripture when using the Exegetical Guide. Why? Anyone know?

It does appear - see Gen 2:24 for an example:
but only if you have set the Word by Word section to report on all words - using the Settings menu that appears if you hover your mouse at the top right of the section
And, in general, these type of questions are best posted in the Desktop forum (or the forum relevant to the platform you are using)
