What are the course textbooks for these two mobile ed courses?
Mobile Ed: BI291 The Apocrypha: Witness between the Testaments (8 hour course)
Mobile Ed: NT202 A Survey of Jewish History and Literature from the Second Temple Period (10 hour course)

Faithlife courses do not have text books. They do have recommended readings though. You can find them at the URL for each course
You have to either join or follow the course. Once you do, on the left is Bible Study -> Logos Documents. You can find the files there.

If you go to Courses in the Tools menu (it may take a couple minutes to load), then find or search for NT202 or BI291, it will come up with the description of the course. The book listed under "Requirements" is the book you get when you purchase the course - this is the "textbook" (the media type is "Courseware Textbook") that is basically a word for word transcript of the videos, with suggested readings at the end of each lesson.
The suggested readings are just links to other Logos books, and it will show you if you own them or not, as well as how many times they are linked to for the course, which gives you an idea if you should purchase the book or not. The course BI291, for example, has one book with 135 readings from it, and several other books with just 1.
I was going to copy and paste the info for BI291 here, but it only copies the description, not the list of suggested books. But you can see that info easy enough in your own library, whether or not you own the course (I don't own BI291, but the Course tool shows me the list of books needed for the suggested readings).

If you have these Courses in your library search on the reference number, i.e. NT202, and you will find the Courseware Textbook amongst the results.

I do not own these courses. Thanks Mattillo I just tried that and it did not work.

I am looking for Notes document that highlights the readings for each class

I haven’t paid attention to the Courses tool in Logos but I just tried it for a course I don’t own (NT202) and found it gave me a list of all the reference and suggested reading resources, along with icons as to whether I have access to this resurces
