On the windows version I can click on the ESV icon in the top ribbon and it will load the bible. This does not happen on the mac version

Useful workaround: create ESV shortcut next to command.

We've got a bug filed for this. As KSFJ said, you can drag ESV from your Library to create a shortcut which will give you one click access.
