Weird text issues in Notes - Logos changes what I type

When I type the ." Logos changes it to ""

I have a video showing this but this Community system won't allow video upload.

I opened a case with Tech Support and they thought it was my Mac Mini but then when it also happened on my MacBook Pro, they have no answer.

This doesn't happen in any other app. I only have noticed it in the Notes tool.
