In Romans 16:1 the english word is servant. the lemma word is diakonos G1249 and the Greek text word diakonon. The question is why is the Greek text word diakonon not in any Greek Lexicons but the lemma word diakonos is?
By definition, the lemma is the dictionary form of the word. The dictionary includes all forms of the word (think morphology) under the single lemma. In English this means you look for the lemma sit in the dictionary. Sit will include sit, sitting, sits, and sat.
"diakonon" is the accusative case of "diakonos", which is only a grammatical difference, not a difference in meaning of the word (a grammatical difference can of course mean a difference in the meaning of the phrase). English has lost most things like this, but Greek, German and many other languages still have them.
