Too many I haven't seen although the commentary on the Haggadah and the volume on the Shema I would recommend. The others I don't know.
I recommend "The Divine Symphony" not so much because it is Jewish (I am not sure it is that Jewish) but because it is a very readable introduction to source criticism. You don't become an expert by reading the book but it gives you a coherent picture of the ideology of each "source" and it tries to sketch the order of redactional processes. It is based on lectures delivered on the Israeli radio to the general public. The original version was very interesting and it was one of the reasons I decided to study the OT when I went to university. So if you ever wondered what all these J, E, P , D and H stand for or if you are just looking for a very interesting book to read cover to cover, this is the book for you.
Those interested in Maimonides have probably heard of Hartmann's book and probably already own a copy.
