Every attempt I've made to use Word styles (i.e. field:Bible) has failed. Here's logs and a test file. Am I doing something wrong? It's only "three verses" long.

Your docx fails everytime for me too.
Copied & pasted into new docx (with stripping out all but text) and it worked. i probably don't have your Word Style (field:Bible).

BUG with Word style field:Bible.
Build failed: Error while reading document.
i built a quick & dirty Macro in this file which adds {{field-on:Bible}} and {{field-off:Bible}} around selected text.

(had to zip it because it is a docm file)
The down side to this is that after making all your changes you would have to use SaveAs to save it as a docx.
