I've been intrigued by what I've read in Thomas Oden's 4 Vol Classical Pastoral Care
If you own an older base package (pre KF) I know it was included in Scholar's Silver; it is currently not in a base package
The Contemplative Pastor, by Eugene Peterson; although more for the Pastor to reflect on inwardly, Peterson writes on issues of pastoring that I would think you could find applicable to pastoral care. Plus this book is just an incredibly great read. Peterson writes very well

I concur with Paul that Oden's series is a good overview with some very good principles and examples. You'll also probably want to add something along the lines of one of the Pastoral Care collections when convenient at some future date. Take a look at these examples:
Jay Adams has great material through Zondervan available in the Biblical Counseling Collection mentioned by Brother Mark.
