What is an example of a book that would be called a 'Theology'? I have a class assignment and the professor has asked us to "Consult 3 Theologies in your Logos or personal library.

Strictly guessing the good professor, but I'd suspect if you search in your library for 'systemic' and 'theology', that may be what he's referring to.
In my library, all my theology books cover the waterfront (Historical Theology, Encyclopaedia of Christianity, Interpretation of Theology, etc).

As Denise alluded to, systematic theologies (STs) are probably what they professor is referring to. Here is a link to a bunch of systematic theologies available from Logos:

Typing "systematic" in to the library window will find a few, but not all STs have systematic in their name. Typing the following into the library window will find more (if you own them):
subject:"theology, doctrinal"
