How would I filter out everything but proper names and nouns in the Book of Daniel?
If you are tsalking about removing the text, I don't think that would be possible. If you want to quickly identify proper names and nouns, it seems like a visual filter would be the way to go.
Thinking more about this, if you just want a list of Nouns and Proper names; you could do a morph search (analysis view) and export the list to a spreadhseet.

[I] Morph visual filters using Hebrew and Aramaic so Nouns and Names have Black text while others have text size reduced with lighter font color (possibility is white text on white background).
For grins, created a visual filter for Aramaic to change font color:
