Is there a way, when looking at a verse, to click something to look through my whole library to find where my systematic theologies, bible dictionaries, monographs, etc. have referenced that verse?

Try using the Cited By tool. You may need to create a Collection for your systematic theologies and then enable it to be viewed in Cited By.
I actually just found out that I could do it by creating a new guide template...

If you are in a Bible and right click and select 'Reference' on the right you'll see the options to search all open resources or your entire library (besides the Bible you are in). Is that what you want?
To search a subset of your Library, create a collection or collections and create a custom Passage Guide with only that collection or those collections in the guide, give it a name you'll remember, then select Reference from the right click menu, select that guide by name on the left and it will do the search.
