How do I view the books in my library and be able to go back to it when I reopen the app?

Not entirely sure what you're asking but let me guess. You want to have Logos app open to the Library every time it opens? Not possible. You open it and it opens to the home page and then you hit your library button which you access by tapping the menu button at the bottom center of your Kindle Fire's display when Logo is open. Then tap the Library button which is in the top center of the toolbar that pops up. I wish there was a toolbar that was always present except when a book is open, but that's not how they designed the app. Hit that menu button to access most of the features of the app.

My kindle fire opens up to the last screen I was on before opening up another app (I am offline now so I don't know if that makes a difference).

You have to download books to your device whilst online. Find the book in Library,  tap the circled arrow and then tap Download. When offline the only books you see in Library are ones you downloaded.
