why does it seem there are no 'interlinear' entries for a great portion of ESV, 1 Sam 14:41? (see attachment)
That's because the ESV's reading of that verse is taken from the Greek Septuagint and not the Hebrew Bible, so it doesn't have any Hebrew to align to.

Appears ESV has added many words in 1 Samuel 14:41 to elaborate on "Give a perfect lot", which do not have Hebrew words for reverse interlinear:
