I want to highlight a paragraph, sentence, or a portion of text, and copy it into another program. Sometimes I get the copy option when I highlight the text and right click and sometimes I don't. What's the trick?

Make sure you have the "selection" tab selected on the right side of the menu, otherwise you won't see it. Click on "Selection" if it's not.
