Logos 4 Ribbon & Command Bar

Hi all!  I have two questions:

My first question for Logos 4:  How do I add or remove things from the Ribbon.  I know all about the Customize link in the lower left area of the screen, but from when I've found that can only be used to rearrange the order of what is on the ribbon.

Is this simply not an option or am I just missing something?

My second question is this:  Is there a reference of commands for the Command Bar?

And rearange is all you can do.  We keep asking for more power though.
