The Basics of Biblical Greek (Mounce) / Hebrew (Practico and Van Pelt) complete with workbooks (fillable blanks please!) would be worthy additions.
At least my seminary requires them, and I do not believe they are alone.

I was out of school. But since I'm only 39 [:p] I figured I could do more. After 15 years I've just gone back for a Masters of Biblical Languages. While I'm reasonably capable with Greek, Hebrew has been a gaping hole in my education. I've done self-study but have finally determined that I will gain the most from the seminary environment where I can get more immediate feedback.
This is one of the primary reasons my presence on the forum has dropped significantly in the last few months.
