It would be great if there were a time stamp for notes that are created and updated. That way over time one could see the progression of thought and notes.

You're in luck! You can sort your notes by entry date-time.
In the panel where your notes file is open, click on the icon in the upper left corner.
In the dropdown menu, click on Sort By Date Added.
Later, when you want to find a note by its verse reference, just re-sort by reference
