How do I read offline with a T-mobil Samsung Gravity Samrt phone?
You need to download the resource to your phone.
With the resource open, press in the middle of the text and you will see panels appear at the top and bottom of the screen.
Press on the "i" symbol at the top right and then press the Download button in the resulting screen.
Note that this only works for purchased resources, not free ones.
You can also request downloads from within the Library window.

You should just be able to open it from the library, just as you would when online.

Are any of the Bibles that come with the Android app downloaded? I can't get navigate through any Bible with the chapter & verse menu unless connected to the web.

Are these the free Bibles which come with the app or ones which you have purchased?
Only purchased resources can be downloaded and - subsequently - accessed offline
