Is there a way to configure Bibles so they display at 1 verse per display line, instead of in paragraphs? I poked around in the help files, but I couldn't find anything.

No.
There are a few that do so already, but if it is in paragraph mode it is paragraph mode all the time and vice versa with line by line.
