Is there is a process in Logos 4 that will show an English word and list the original different Greek or Hebrew words that are translated into this particular English word?

Absolutely! It is called Bible Word Study and is on the right-click menu in your English text Bible.
Also, if you want to do a word study that is independent of any particular Bible verse, "Bible Word Study" is also available under the "Guides" menu.

In relation to the "ring" is there a way for the popup ring (displayed when hovering over one part of the 'main' ring") to be held so that it can be copied?
No. The suggestion to make it a panel that can be fixed and clicked on has been made. I haven't heard of plans to change how it functions, however.
