Mark Barnes, an MVP here, has created a set of videos based on Logos 4 which are still relevant for Logos 5. In addition he has a video highlighting the new features of Logos 5. Of course some features apply to the upper level packages only, so depending on what package you bought, you may see him refer to tools, resources, or functions you do not have.
