All of my apparatuses have very blury Greek text. Any idea why or how to fix it?

You're making a very BOLD statement. Mine are also blurry as if the bolding is doubled. Compare to the 'best' software:

I fixed it by changing my Greek font away from SBL greek. Perhaps, SBL Greek does not have a bold variety and instead doubles up the weight of the bolds.

Try Gentium as default Greek font.

Trying to improve the 'bold' look, I tried Gentium but it seemed smudgy on mine where the letters are little. So I went with Palatino Linotype (which gets ink all over my fingers but at least not the screen).

I am able to reproduce this on Mac on 5.0b SR-3. This issue appears to be fixed in 5.1 Beta 6 for beta testers, and will be fixed in general when 5.1 ships to the stable channel.
