Default Note Problems

I have my settings set to "default" font for notes, but every time I open a new note document the font is Segoe UI.  I can change the font when adding a new note, but if I add another note to the same note document it goes back to Sogoe UI.

I take a lot of notes, so it is becoming very cumbersome to change the font every time.

I'm not sure how to fix this?
