Is there a way to devote more screen real estate to the actual note? I have an SGS3 and even in landscape mode their isn't much room devoted to the note itself.

Seems to be the same size in landscape and portrait.

We'll definitely look at improving this. If you're on an 3" screen, 4 lines of text seems plenty. But if you're on a 5" screen or a tablet, we can take up more.
