I just upped my bid to help it along.
Using adventure and community to challenge young people to continually say "yes" to God

Too late. I put my bid in long ago. Do they contain an interlinear? [6]

How does this set differ than the Early Church Fathers set?

The Early Church Fathers set has a translation of the works with very brief introductory material. There is more extensive discussion in the various volumes in this set. Also, it provides a second translation. Lightfoot in particular was noted as particularly knowledgeable in patristics.

I have the ECF volumes and the following editions regarding the Apostolic Fathers:
Lightfoot's Apostolic Fathers in Greek and English
... and some additional patristic resources.
I realize I'm asking from the perspective of a personal preference, but do you think this set would be adding significant disccusion?

What you have are the texts themselves; what you'd get is mainly commentaries on those texts, together with books about the authors and their times. Though I believe there are some translations as well.
