Is there anyway to highlight across all open bibles?

No there isn't. The closest you can do is attach a note to a verse across all Bibles, by making sure the Reference tab (instead of the Selection tab) is chosen on the right-click menu before you choose "Add a note to..."; that will cause the note to be associated with that scripture reference across all Bibles instead of the specifically selected text which is only in one Bible.
However that kind of note does not allow the option of "Highlight with Note Color" like the notes attached to a particular selection do.
