Is there a way to highlight text [using Control K or perhaps something else] in various colors?
Yes,
If you open up the Highlighting pane (Tools>Highlighting) you will have a number of color options to highlight. If you want to change the color of the actual text, you will be able to do this when 4.0a is released (it should be soon as 4.0a is in Release Candidate stage right now).
EDIT: FYI Ctrl-K applies your last used Visual markup.

On my computer it has the strange quirk of applying the next-to-last used Visual markup. No one's been able to figure it out.
