I don't believe that you can do precisely what you want. However, a number of people use Favorites/Bookmraks to track their reading. Would that be a satisfactory solution? If not, you can use the Reading Plan, turn off the filter so start and stop do not appear, and ignore messages that you are ahead/behind.

Click the visual filter icon - three interlocking circles - and deselect the one associated with the Reading Plan. Example below
